Hi,
Is there anyway that I can specifically SEO my blog to a certain country?
Currently I try to add the country name and the keyword as much as possible, within the text.
Any ideas?

yes.
In google webmaster tools you can set the country your site is focused on.
Also, it is best to get your site hosted with a server in that country and get a domain with the country specific ending. eg: au for australia.
Also in your contact us section if you can list a contact address in that country, it will help.

Here is a suggestion. Go to Google and type in Google - Your Country or the Country you want to get listed in. For example. Google Spain is Google.es - Google Dubai is Google.ae. You can also buy a domain name for the specific country code you are optimizing for. Submit your site to the Google index for that country and make sure it is in the common language. Hope this helps.

Hmmmm, addition of your country name in the keywords is a good move, I would also suggest you to extract backlinks from the websites which have your country's domain extension.
